Don't know if this is the correct place for this post, but

Are there any small but professional companies that can build small quantities of electronic assemblies ?

There are Chinese services that also offer an excellent service for assembling boards, even for just one.
I recommend jlcpcb, I have been using them for several years both for PCBs and for small series of boards and I am very happy with them.
