if you ARE Starter than start with ARM7 (BEST ONE IS LPC21XX FAMILY)

You can use TMS470R1A256PZ-T (256KB flash,High end timer module ,10-bit multi buffered ADC)from Texas Instruments. 
They provide free samples too !!!  Smiley

Analog devices also provide ARM microcontrollers including different peripherals (10-bit adc,12-bit dac,PLA,etc..) Grin
